Depending on one's eating habits, oil may constitute anywhere from 15-30% of the total caloric intake (more if the diet is very poor). Nearly all oils are dangerous. They are susceptible to rapid deterioration when exposed to heat (in processing as well as storage and cooking), light (transparent bottles), and air (opening the bottle.) Using an organically grown, cold processed, totally unrefined oil that is bottled in an entirely opaque container will result in a considerable extra expense as compared to cheap super market oils, but without changing a single recipe, the benefits will be enormous.
